The Diamond seven course meal menu’ is designed for food lovers and will definitely cover the requests of all attending.

Starting with freshly sliced and cured cold meats, grilled marinated vegetables and accompanied by the pearls of the sea with a rich seafood platter were fresh Tasmanian Oysters and large cooked prawns will catch the eye and the palate of all your guests.
Our variety of entrées (all home made) will meet the expectation of the fussiest mother in law.
Succulent main courses and seasonal roasted vegetable will make everybody forget at least for the day any form of diet.


The package consists of:

  • Pre-dinner drinks including both Alcoholic and Non-Alcoholic beverages
  • Hors-douvres
    a selection of five home made appetisers
  • Beverages - A selection of five wines, Heavy and light beer, Soft Drinks and Champagne for the toast.
  • 5.5 Hours package
  • Room Decorations- Including Candelabras, chair covers and colour sashes of your choice.

Included Antipasto Platter

  • Prosciutto, Bocconcini, Marinated grilled Eggplant, Zucchini, Capsicum. Sun-dried Tomato, sliced Champagne Ham, Salami.

Included Seafood Platter

  • Prawns, Oysters, Calamari, Baby Octopus, lightly fried Whitebait.

Please make two choices from each of the following
Entrees, Main Courses and Desserts:

Soup

  • Pumpkin Country style rich and creamy
  • Minestrone Traditional style including borlotti beans in a tomato rich stock

Salads

  • Caesar Salad Egg, anchovies and croutons on a bed of fresh green Cos lettuce, liberally topped with our creamy home made Caesar dressing.
  • Thai Chicken Tender Chicken slices marinated with Asian flavours served on a crisp lettuce and snow pea shoot salad with a lime and coriander dressing
  • Insalata Caprese Fiordilatte Mozzarella with fresh sliced Tomato, Basil leaves served with extra virgin Olive Oil.

Seafood

  • Calamari Lightly seasoned, fried and served tender with lemon dressing
  • Fish and Rice Fresh fish fillet baked and served on a bed of seafood flavoured rice

Pastas
Served individually or you can combine two pastas to a ‘Bis of Pasta’ on the one plate.

  • Fettuccine Carbonara Bacon and egg on a cream sauce base
  • Lasagne Layers of fresh pasta interlaced with our own bolognaise sauce combining béchamel and mozzarella cheese
  • Cannelloni Fresh Pasta rolls filled with either spinach and Ricotta or Mince and fresh herbs. Made on the premises to your order.
  • Rigatoni Amatriciana Pasta tubes tossed with a bacon and spring onion with a touch of chilli in a Napoli sauce.
  • Tortellini or Ravioli Parcels filled with either meat or spinach and Ricotta

served with seasonal vegetables and a bowl of mixed salad per table

Chicken

  • Florentine Breast of Chicken filled with cheese and spinach
  • San Daniele Chicken fillet Kiev cut wrapped with prosciutto and filled with bocconcini cheese
  • Scaloppine Breast filled grilled with a creamy mushroom sauce
  • Parmigiana Crumbed and coated with tomato and mozzarella cheese

Lamb

  • Rack of Lamb Four point Lamb rack baked with fresh herbs
  • Fillet of Lamb Char grilled fillet of Lamb skewers

Beef

  • Fillet Mignon Prime Eye fillet Beef rolled in bacon with Dianne sauce
  • Rib Eye Steak Large cut of Eye fillet on the bone

Veal

  • Veal Scaloppine Baby Veal Scaloppine served with a succulent Marsala wine sauce

  • Fruit Crepes Light crepes folded over seasonal fruits
  • Sticky Date Pudding Drizzled with caramel sauce served with double cream
  • Mixed Berries Mixed Berries marinated with Galliano liquor served with ice cream and Zabaglione sauce
  • Tiramisu
  • Apple and Berry Strudel Hot pastry wrapped parcel of Forest Berries and Tasmanian Apple
  • Chocolate Mousse Freshly made rich creamy Mousse
